Shohaku is a mid-tier ceremonial matcha from Marukyu Koyamaen, stone-ground from shade-grown tencha in Uji, Kyoto. At this point in the range, it offers more refinement than the everyday grades without tipping into special-occasion territory.
A solid choice for those who have settled into a regular matcha routine and want something more considered, whether drunk straight or prepared as a latte.
How to brew (usucha)
Best prepared as usucha: 1.5g at 70–80°C, whisked until frothy.
How to brew (matcha latte)
Whisk 2–3g with a small amount of hot water to form a paste, then add steamed or cold milk of your choice.
