Isuzu is a Japanese ceremonial matcha from Marukyu Koyamaen, stone-ground from shade-grown tencha leaves in Uji, Kyoto. Sitting a step above Aoarashi in the range, it brings more refinement to the cup: a smoother texture and greater depth that rewards careful preparation.
Well suited to daily drinkers who want something more considered, Isuzu holds its own in a latte but is most at home as a simple usucha.
How to brew (usucha)
Sift 1.5–2g (approximately ½ tsp) into your bowl. Add 60–70ml of water at 70–80°C. Whisk in a brisk W motion until frothy. Drink immediately.
How to brew (matcha latte)
Whisk 2–3g with a small amount of hot water to form a paste, then add steamed or cold milk of your choice.
