Chigi no Shiro is a ceremonial matcha from Marukyu Koyamaen, named after the ornate crossed timbers that crown traditional Japanese shrines. Stone-ground from shade-grown tencha in Uji, Kyoto, it sits in the approachable end of the Marukyu range: well-made, consistent, and suited to everyday drinking.

How to brew (usucha)
Sift 1.5–2g (approximately ½ tsp) into your bowl. Add 60–70ml of water at 70–80°C. Whisk in a brisk W motion until frothy. Drink immediately.

How to brew (matcha latte)
Whisk 2–3g with a small amount of hot water to form a paste, then add steamed or cold milk of your choice.
